AGAVE FIELDS
A journey through the agave highlands of Jalisco
At 2,000 metres above sea level, the red volcanic soil of the Jalisco highlands produces some of the finest blue Weber agave in the world. This short documentary follows the jimadores — the skilled harvesters — through a single day during the harvest season.
Each plant takes 7-10 years to mature. The jimadores can tell by sight and touch when a piña is ready. There's no technology that replaces this knowledge — it's passed down through generations.
From the fields to the tahona, this is the journey that gives Patron its character.
